Spinach Pasta Salad
~ ½ lb pasta of your choice
some spinach
some basil
2 tbls parmesan
2 garlic cloves
1 tbl olive oil
1 tbl water
½ cup mayonnaise
- cook, drain & rinse pasta
- in blender, mix spinach, basil, parmesan and garlic
- add to blender olive oil and water
- blend until a paste
- stir paste with ½ mayo and pasta
- chill
Grape and Mint Dessert (For 15 people or more, potluck recipe)
- Wash a whole bag of red grapes (around 8 cups?)
- Mix together a pkg of cream cheese, a container of cream cheese (8 oz), about ¼ cup sugar, and a tsp vanilla
- Fold in grapes
- The original recipe calls for 1 cup brown sugar and crushed pecans sprinkled on the top
- Our concoction used about ¼ cup of brown sugar and a bunch of fresh mint from the garden.
- Refrigerate
