The topping doesn’t look as good as the traditional recipe but tastes good and is much healthier.
For a medium baking dish: ~9x9 (make sure the pan is tall enough so it doesn’t bubble over into your stove while baking)
Fruit
- 4-5 apples, not peeled, chopped
- 1 cup frozen blueberries (optional)
- other fruit, get creative (optional)
Topping
- 2 ripe banana, smashed
- ¼ cup canola oil
- 2 cups oatmeal, old fashioned
- ½ cup whole wheat flour
Mix the fruit in the dish, set aside. In a separate bowl, mix the banana, oil, oatmeal, and flour. The topping mix should be a sticky spreadable consistency. Spread the topping over the fruit. Cover dish. Bake at 375 F for 30-45 minutes or until apples are cooked well and can be pierced easily with a fork. You can remove the cover and bake for an additional 5-10 minutes if you’d like the topping browned a bit. Alternatively, instead of baking, microwave on high for ~8 minutes.
