White Bean Spread

Makes about 1 ½ cups

1 15 oz can Navy Beans or other white beans

3 Large cloves garlic

3 T fresh oregano (or 1 T dried)

3 T fresh basil (or 1 T dried)

1 T Extra Virgin Olive Oil (preferably Greek)

2 T fresh lemon juice

1 T Red Wine Vinegar

Salt and pepper to taste

Rinse beans and chop garlic and fresh herbs. Combine ingredients into a food processor/blender and process until smooth (mixture will be very thick). Taste for seasonings. Cover and refrigerate for up to 3 days.
